Regarding “food holidays,” I think some are pretty awesome (Chocolate Pudding Day!) and some are kind of boring. Apparently one day last week was National Eat Beans Day. Eat Beans Day?! This is where everyone in my [Hispanic] family (including yours truly) collectively shakes their head and says, “Everyday is eat beans day.”

But National Mojito Day? I’d like to celebrate that ?

The Pilot is the king of mojitos. He uses powdered sugar, so you can’t taste the alcohol, and they’re minty, sweet, and will punch you in the face if you know what I mean. 


I decided to make a lighter version, because I recently learned that you can use equal parts honey and water to make a simple syrup and was excited to give it a whirl.

So, I made a little simple syrup with equal parts honey and water,

and allowed it to cool to room temperature. After that, I added lots of fresh mint, lime juice, rum, and sparkling lime water.

A refreshing and delightful summer cocktail!

Ingredients

For the honey simple syrup

  • 1/2 cup honey
  • 1/2 cup water

For the mojito

  • 1.5 oz honey simple syrup
  • 1.5 oz clear rum
  • 3 oz lime sparkling water
  • 1 heaping tablespoon fresh mint
  • Juice of 1/2 lime
  • a few lime slices for garnish

Instructions

  1. Make the honey simple syrup by heating the honey and water on medium until dissolved. Reduce heat to low, stir for a minute or so and remove from heat to cool to room temperature.
  2. For the cocktail, combine the simple syrup, rum, mint, lime juice, sparkling water and a few ice cubes in a cocktail shaker. Shake and serve over lime slices with extra mint for garnish.

Notes

  • Store extra simple syrup in a jar in the fridge as it will keep well for at least a couple of weeks.
