Garlic Tomatoes – for the Tapas Bar




  • 8plum tomatoes, ripe cut in 1/2
  • 4sprigs fresh thyme
  • 16garlic cloves, in skin
  • 14cup olive oil
  • salt and pepper


  1. preheat oven to 425.
  2. Place tomatoes cut side up on a large pan in a single layer.
  3. Place sprigs of thyme and the cloves of garlic in between the tomatoes.
  4. Pour oil over the tomatoes.
  5. Bake for 45 minutes. Tomatoes will char slightly.
  6. discard thyme.
  7. Season with salt and pepper.
  8. Squeeze meat from cloves over tomatoes before eating them warm.
  9. Garnish with fresh thyme.
